The fermentation process begins in small stainless steel fermenters, gently punched down several times daily to encourages extraction of texture, flavor and aromatics. After a light press and skin removal, this wine is aged for 10 months in 100% French oak barrels. The oak regime, 70% new, balance neutral, adds depth and complexity to the finished wine.
A welcoming bouquet of bright cherry, black plum and cedar give way to subtle baking spices. On the palate, rich cherry and bright strawberries lead to notes of oak, vanilla and baking spices, finishing with velvety tannins.
