Pinot Noir grapes were hand-harvested in the cool morning hours to ensure they arrived at the winery in pristine condition. Whole clusters were sent direct to press for a gentle pressing cycle to achieve slight color extraction and to minimize tannins. The wine was then fermented at a low temperature in stainless steel tanks to preserve freshness and vibrant fruit aromatics.
