Harvested in the cool morning hours, the fruit was brought to the winery and destemmed. The fruit was then fermented on the skins in open-top stainless-steel fermenters for 10 days with regular pump overs. The finished wine was pressed off and racked into small French oak barrels, where it aged for 14 months.
