Tasting Notes
Aromas of lemon curd, apple and toasted brioche are complemented by notes of tropical fruit and lemon blossom. On the palate, this wine opens with a delicate mousse and bright acidity. Flavors of green apples, pineapple and candied citrus lead into a clean refreshing finish.

Our Blanc de Blancs, meaning “white of whites”, is made of 100% Chardonnay grapes from our certified sustainable estate, Smith Vineyard. The fruit was harvested by hand in early August, when sugars were low and acid was beautiful. Fermentation in stainless steel tanks allowed the bright fruit aromas to shine, and 24 months of aging on lees added pleasant toasty aromas and flavor complexity.
