Fish Ceviche

INGREDIENTS

  • 1 1/2 pounds firm white fish, striped bass, sea bass or snapper, 1/4-inch dice
  • 2 teaspoons salt
  • 1/2 cup fresh lime juice
  • 1/4 cup cilantro
  • 1 tablespoon mint
  • 1/4 cup red onion, finely chopped
  • 1 small cucumber, finely chopped
  • 1 avocado, finely chopped
  • 1 garlic clove, minced
  • 1 tablespoon jalapeno, minced

Combine ingredients. Serve with sweet potato chips.
