Easy Baked Apples
Pairs with Hahn SLH Pinot Gris or Hahn Pinot Noir
Serves 6
INGREDIENTS
- 6 apples
- 1 cup granola
- 1/3 cup currants
- 1/3 cup chopped walnuts
- 2 tablespoons chopped candied ginger
- 1/2 teaspoon cinnamon
- 1/4 teaspoon freshly ground nutmeg
- 1/4 cup maple syrup
- 6 tablespoons melted butter
- 2 tablespoons orange juice
- 1 teaspoon orange zest
- 1/2 cup apple cider
- Pinch of salt
- Creme fraiche for garnish
DIRECTIONS
Pre-heat the oven to 375 degrees.
With a melon baller, clean out the core and make a one-inch hole through the center of the apple, leaving the very bottom of the apple intact. Repeat with each apple and place in a small baking dish.
In a small bowl, mix together granola, currants, walnuts, candied ginger, cinnamon, nutmeg, maple syrup, orange juice, orange zest, salt and 4 tablespoons melted butter. Place as much of the filling into each apple as possible by pressing and filling down into the cavity. Repeat with all apples. Melt 2 tablespoons butter with apple cider and pour into baking dish with apples. Cover with foil and bake for 25-35 minutes, until soft, but not mushy. Let cool slightly and serve with creme fraiche.
