Easy Baked Apples

Pairs well with SLH Pinot Noir and Hahn Pinot Noir

Makes 6 servings

INGREDIENTS

  • 6 apples
  • 1 cup granola
  • 1/3 cup currants
  • 1/3 cup chopped walnuts
  • 2 tablespoons chopped candied ginger
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon freshly ground nutmeg
  • 1/4 cup maple syrup
  • 6 tablespoons melted butter
  • 2 tablespoons orange juice
  • 1 teaspoon orange zest
  • 1/2 cup apple cider
  • Pinch of salt
  • Creme fraiche for garnish

 

Pre-heat the oven to 375 degrees.

With a melon baller, clean out the core and make a one-inch hole through the center of the apple, leaving the very bottom of the apple intact. Repeat with each apple and place in a small baking dish.

In a small bowl mix together granola, currants, walnuts, candied ginger, cinnamon, nutmeg, maple syrup, orange juice, orange zest, salt and 4 tablespoons melted butter. Place as much of the filling into each apple as possible by pressing and filling down into the cavity. Repeat with all apples. Melt 2 tablespoons butter with apple cider and pour into baking dish with apples. Cover with foil and bake for 25-35 minutes, until soft, but not mushy. Let cool slightly and serve with creme fraiche.
