Dad’s Wedge Salad

Pair with Hahn Chardonnay or Hahn SLH Pinot Noir

Makes 4 servings

INGREDIENTS FOR SALAD

  • 1 head artisan Romaine lettuce, such as Sweet Gem
  • 1 jalapeño chili
  • 1 pint cherry tomatoes

INGREDIENTS FOR BUTTERMILK BLUE CHEESE DRESSING

  • 6 oz. Point Reyes or other soft blue cheese, crumbled
  • 1/2 cup buttermilk
  • 1 cup sour cream
  • 3 tablespoons cider vinegar
  • 1 teaspoon sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon Kosher salt
  • 1/2 teaspoon freshly ground black pepper

Cut the head of lettuce into wedges. Clean, de-stem and halve the tomatoes. Take the core and seeds from the jalapeño and slice thinly.

Arrange the lettuce on a plate and spoon the dressing over it, garnishing with the tomatoes and chili slices.

BUTTERMILK BLUE CHEESE DRESSING:

Crumble the cheese by hand. In a medium bowl whisk together the remaining ingredients.

Add the cheese to the dressing, reserving a few choice pieces to garnish the top of the salad.
